You signal to the dealer that you wish to double down by touching an extended pointer finger to the table.

Side Bets: Over the last 20 years or so, Blackjack has become a popular venue for hundreds of different side bets. These bets are placed in addition to your initial bet and are made with chips in a special section of the table. While many of these bets are highly risky, some, such as insurance, can provide a very lucrative return on your investment.
